Unusual indeed. Too old to be a CUCV, and no CUCV was branded as GMC anyway. They were all Chevrolets.
It’s a 1979-1980 GMC C-35 Sierra (cab & chassis). Same as this one:
Seems to have been used by the Israeli army. My guess would be they took a humble civilian Rounded-Line, and turned it into a military man-of-war.
I do question the use of a C-35, when a K-35 would have performed a military role far better.
